Ingredients:

  • 1 cup low-fat buttermilk
  • 2 cups bran cereal
  • 1/4 cup flaxseed meal
  • 4 bananas
  • 1 cup sugar
  • 1 large egg
  • 1/4 cup canola oil
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Preparation:

  1. Combine the cereal, buttermilk, and flaxseed in a food processor, then let stand for 30 minutes. Preheat the oven to 350 degrees F and coat a 12 cup muffin pan with cooking spray.
  2. Add 3 bananas to cereal mixture and process until smooth, then add sugar, egg, and oil, and mix again.
  3. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Then, add the resulting mixture to the food processor and blend until smooth.
  4. Pour the batter equally into the cups of the muffin pan, then slice the remaining banana and add the slices to the top of each muffin.
  5. Bake for 20 minutes or until slightly browned, then let cool before serving.

Fresh Ricotta Frittata

Ingredients:

  • 12 oz applewood bacon, cut into pieces
  • 1 cup sliced shallots
  • 12 cups coarsely chopped greens
  • 12 large eggs
  • 1/2 tsp kosher salt
  • 1 cup freshly grated Parmesan cheese
  • 12 oz ricotta cheese

Preparation:

  1. Preheat oven to 350 degrees F. Cook the bacon in a nonstick skillet until crisp, then transfer to a paper towel to drain. Save the bacon drippings, and return to Tbsp of them to the skillet. Saute the shallots until golden brown, then add the greens and saute until wilted and tender, or about 15 minutes.
  2. Beat eggs and salt in a large bowl, then add 3/4 cup Parmesan cheese, the cooked greens, and half of the bacon. Stir in the ricotta.
  3. Heat 1 Tbsp of the saved bacon drippings in a skillet, then pour in the egg mixture. Sprinkle the leftover bacon and Parmesan over top, and cook over medium heat until the frittata sets at the edges, then transfer to the oven and bake for 20 minutes. Let cool, then slice and serve.

Ingredients:

  • 1 cup flour
  • 3 Tbsp cornflour
  • 1 tsp ginger garlic paste
  • 1/2 tsp black pepper
  • 1 tsp soya sauce
  • salt and sugar as required
  • 3/4 cup water
  • 3 cups button mushrooms
  • oil for frying
  • 3 spring onions, finely chopped
  • 2 green chilies, finely chopped
  • 2 tsp garlic, finely chopped
  • 2 tsp ginger, finely chopped
  • 1 tsp celery, finely chopped
  • 1/2 tsp black pepper powder or crushed black pepper
  • 1 Tbsp soy sauce
  • 1 medium size green or yellow bell pepper, chopped

Preparation:

  1. Combine first eight ingredients in a small bowl.
  2. Dip the mushrooms in the batter.
  3. Fry the mushrooms in oil, then set them aside.
  4. Add the spring onion whites to the oil and stir fry them.
  5. Add the celery, green chili, ginger, garlic, and the spring onion greens, and continue stir frying.
  6. Add the black pepper, salt, sugar, and soya sauce.
  7. Add the mushrooms, and stir so they are fully coated with the sauce.

Ingredients:

  • 1 clove minced garlic
  • 1/2 tsp kosher salt

  • 4 portobello mushroom caps, stems and gills removed
  • 4 large slices country style sourdough bread, cut in half
  • 1/2 cup sliced jarred roasted red peppers
  • 1/2 cup chopped tomato

  3. In another bowl, combine the red peppers, tomato, feta, olives, vinegar, oregano, and 1 Tbsp oil.
  4. Grill mushroom caps until tender, and grill the bread until crisp.

  • 1 tablespoon olive oil
  • 2 cups chopped leeks or onions
  • 1 teaspoon whole fennel seeds
  • 1 cup pearl barley
  • 2 tablespoons black "buffalo" barley (optional)

  • 3 cups chicken broth
  • 1-1/2 cups water
  • 1/2 ounce dried mushrooms (rinse if necessary)
  • Salt to taste

Preparation:

  1. Heat oil in a pressure cooker, then add leeks and fennel, cooking until leeks are brown.
  2. Stir in barley, then add sherry and stir until it evaporates completely before adding water, broth, mushrooms, and salt.
  3. Close the pressure cooker and turn the pressure and heat to high. Cook for 18 minutes, then release pressure and remove the lid carefully.
  4. Season with salt and pepper, then set the cooker to high heat and cook until thickened. Add the Parmesan, and serve in bowls.

  • 1/3 cup rice wine vinegar

  4. Season the salad with pepper, and sprinkle with sesame seeds and the remaining 2 scallions.

  • 1 tube refrigerated crescent rolls

  • 2 cups shredded mozzarella cheese

  • 1/4 tsp rubbed sage

  1. Separate the crescent roll dough and place in an ungreased pie pan with the points toward the center, then press and form them into a crust. Spread the crust with mustard.
  2. In a skillet, saute the asparagus, onion, and mushrooms in butter.
  3. Combine the remaining ingredients in a large bowl, then stir in the asparagus mixture. Pour everything into the crust.
  4. Bake at 375 degrees F for 30 minutes, or until done. Let stand before serving.
