It’s a New Year’s Day tradition to eat black-eyed peas on New Year’s Day for good luck. Serve this easy, healthy recipe for an appetizer, side dish with fish, chicken or pork or on top of a bed of arugula.

Ingredients

  • 1 (15.5 ounce) can black-eyed peas, rinsed and drained
  • 1/3 cup chopped tomatoes
  • 11/2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon olive oil
